As someone new to keto/low carb or looking into it, I am sure you are concerned about eating healthy and staying on budget. The plus side to keto/ low carb is that it is family friendly, therefore no need to make two separate meals. To help out, I am sharing my favorite chicken recipes that are delicious and budget-friendly.

There is no reason to spend a lot of money on keto/low carb. The best part of chicken is that it is inexpensive and multifaceted, easily taking on different flavors with the implementation of a variety of seasonings and marinades and so easy to cook.

Tip: I buy large packs of meat at my Sams Club and portion into bags for my family size. This not only saves money but if you add marinade to the bag, it'll marinade as it thaws. This method saves time and money. It also prevents boredom by avoiding eating the same thing all the time.

These recipes I am sharing are some of my favorites that my family also loves and keeps us on budget.  It helps me lose weight and keeps the family eating healthy meals. I love that I don't have to make two separate meals!

This recipe is pretty quick and easy to cook, though it does require a bit of prep time for the chicken. For the low carb chicken enchilada casserole, I removed the tortillas and added some extra cheese. You can add additional ingredients depending on what you like in your enchiladas, like avocado, green onions, lettuce, tomato, whatever your little heart desires. You can add black olives, use monterey jack cheese or even add black beans if you don’t mind some extra carbs.
