Any time that I serve chicken, I worry that its boring. For me, I want a lot of flavor to any chicken dish. This Low Carb Creamy Spinach & Mushroom Chicken is anything but boring. The flavors perfectly meld together in delicious creaminess. If you’re looking for an easy and cheap : dish for dinner, this is for you.

Low Carb Creamy Spinach Mushroom Chicken
Ingredients:
Chicken Breasts:
- 5-6 chicken breasts (thin or pound down)
- 1 tbsp lemon juice
- 2 garlic cloves
- 1 tsp dried thyme
- 1 tsp Rosemary
- 1 tsp salt
- ½ tsp cracked or coarsely ground pepper
- 2 tbsp olive oil
Cream Sauce:
- 1 tbsp olive oil
- 2 cups fresh mushrooms
- 1 ½ cups fresh spinach
- 2 garlic cloves
- 1 tsp parsley
- 1 tsp Rosemary
- 1 cup heavy cream
- 1 tsp nutmeg
- Salt & pepper
- ½ cup parmesan cheese
Directions:
For the Chicken:
Trim your breasts and dry them. Season them with the lemon juice and salt and allow to absorb for approx. 15 minutes. Mix the garlic, thyme, rosemary and pepper and coat chicken evenly with seasoning mixture.
In a large skillet, heat 1 tbsp olive oil. Sear chicken, until desired golden color is reached and chicken is cooked through. Keep warm while preparing the sauce.
For the Sauce:
In the same skillet you cooked the chicken, add the olive oil, spinach and mushrooms, seasoning with salt and pepper. Saute’ mushrooms are tender. Add the garlic, parsley, thyme and rosemary and continue to saute’ for 1 minute. After 1 minute, stir in the heavy cream while bringing to a simmer, reduce heat and continue cooking until sauce has reached desired thickening. Stir in nutmeg and parmesan cheese, allowing cheese to melt into the sauce. Stir occasionally to prevent sticking and burning. Add chicken chicken to the pan with the sauce. Serve, garnishing with fresh parsley and parmesan.
