My first journey into eating keto and low carb started badly.

I spent a huge amount of time in the bathroom, if you know what I mean.

At work.

Hugely embarrassing. Ever spend an inordinate amount of time suffering in the bathroom?

You see, I had started thinking low carb was just eggs and bacon...all the time. Then I added in a 'cheat'.

A candy that had after effects. It's funny now as a lot of us have experienced that but was embarrassing at the time, to say the least.

Don't get me wrong, sometimes I still do some lazy keto. But the most effective is real foods cooked yourself.

Which leads me to today's recipe which is real food, Brussel sprouts that you'll cook yourself.

I use to think I hated them, as a lot of people do.

However, the real issue is that they just were not cooked right. 

So, take your time and weed through a few recipes until you find a few that you too will love. 

On to this tasty recipe that we love!

This recipe couldn't be easier!

Goat Cheese & Bacon Brussels Sprouts

For this Goat Cheese & Bacon Brussels Sprouts, simply start by prepping the Brussel Sprouts, onion and the bacon. For the sprouts, simply cut off the hard bottom and cut large ones in half. I prep the bacon for this by pre-cutting into bacon bit sized pieces. Cut the onion into slices.

Fry the bacon. Once cooked remove the bacon from pan, setting aside and leaving grease. To the grease add butter and sprouts. Liberally season with Cavender's Greek seasoning and let cook for 10-15 minutes.

Add the sliced red onion  and tablespoon of balsamic vinegar to the mixture. Cook until onions have reached desired tenderness, then add goat cheese, and finally,  sprinkle the bacon bits on top. Serve.

Goat Cheese & Bacon Brussel Sprouts

Flavorful and easy Brussel Sprouts that even the kids loved!

Ingredients

  • 1/2 lb. bacon diced (save grease)
  • 2 tbsp butter
  • Large bag of Brussel sprouts, cut ing the hard bottom off, and halve the larger sprouts.
  • One medium red onion, sliced
  • 1 tbsp balsamic vinegar
  • 1 tsp Cavender's Greek seasoning
  • 1 cup shredded goat cheese

Instructions

  1. Cook half pound of bacon, set aside. I like to cut the bacon up before cooking into bacon-bit sized pieces.
  2. To the bacon grease, add 2 tablespoons of butter. Add Brussel sprouts.
  3. Liberally season with Cavender's Greek seasoning and let cook for 10-15 minutes.
  4. Add sliced red onion and tablespoon of balsamic vinegar.
  5. Cook until onions have softened, then add goat cheese, and sprinkle the bacon bits on top.
