If you have a sweet tooth, as I do, then you know there's really nothing better than a sweet treat. And yes, you can indulge while on keto. 👌

 

Truth be told, cheesecakes are a favorite dessert of mine. 

 

 

What inspired this Keto Berry Cheesecake Parfait recipe?

 

When I saw Jello sugar-free pudding in cheesecake flavor, the thought occurred to me to create a parfait.

 

These Keto Berry Cheesecake Parfaits are smooth and delicious and are low carb, keto, sugar-free, and gluten-free. And honestly, I am a lazy keto lol. 

 

 

These are the perfect low carb dessert all year round, however, made with strawberries and blueberries, they make an excellent Fourth of July dessert.

How long does it take to make?

 

This recipe takes a total of 10 minutes making them a perfect dessert for a quick weeknight treat, an easy date night dessert, simple enough for large gatherings (think baby shower, etc.)  and one of several keto recipes in my arsenal that are simple and low carb/keto friendly!

 

What makes it so quick is that it requires no baking. It uses a simple pudding mix, almond milk, berries, and cool whip. 

 

It's even kid-friendly eating and they can help make them. Mine love to get involved. With three, we get a little assembly line action going. 

 

 

Also great is there are really no special ingredients. What I mean is that all of the ingredients are readily available at your local grocery store. 

 

How do you make Keto Berry Cheesecake Parfaits?

 

Making a keto cheesecake parfait starts with making the pudding, the same process of making regular pudding.

 

You'll just use almond milk instead of regular milk and sugar-free pudding in place of regular pudding. 

 

Cut up the berries.

Prepare the pudding mix according to the package instructions with almond milk.

Then you'll layer the berries and cheesecake pudding in your parfait glass.

Top the parfait with a serving of sugar-free and carb-free whipped cream.

What should I serve it in?

To make a presentation, serve in a parfait glass like this one, a nice jar, or for large gatherings even clear disposable cups. You can also probably find something at Dollar Tree as well.

If you are making a regular sized batch, need too big of a bowl for this recipe either. You'll simply mix the sugar-free cheesecake pudding mix with the sugar-free vanilla almond milk.

Do I have to use strawberries in the Keto Berry Cheesecake Parfait?

No, you don't have to. Use whatever berries are in season or look best.

Can I add a garnish?

Absolutely! You can use sugar-free, low-carb chocolate chunks/chips, add nuts, and/or sugar-free coconut flakes. Whatever strikes your fancy and those that are low carb friendly.

What if I am not serving right away, what do I do?

Depending on how long you are making this before you consume, you'll want to cover it. That's when the jars I mentioned earlier in this post come in handy. They come with a cover so that you can prepare ahead and cover them for freshness. I wouldn't make more than a day ahead just for flavor sake. They will still taste good but with these, the fresher the more optimal the flavor.
