One of the biggest hurdles for those following keto and low carb is finding desserts for holidays. One of my favorite holiday desserts is creamy, delicious fudge. Before keto, I use to make my Mother-In-Law's 5 Minute Fudge. Now that I am on a keto, low carb plan I wanted a creamy treat for the summers patriotic parties without all the carbs and sugar. Making a keto treat recipe that is creamy is so easy thanks to keto friendly sweeteners. I’m fairly certain you'll declare this dessert heaven just as I did. Oh, by the way, this was wholeheartedly kid approved!

To make this delicious mouth-watering keto fudge recipe, you'll need a keto specialty sweetener. The best I have come across is Swerve Confectioners Sweetener, which measures the same as sugar so you'll use the same amount called for in any recipe you're switching.

This delicious homemade creamy Keto Red, White & Blue Fudge is the perfect low carb dessert for holidays and those who follow a keto diet.

Ingredients

  • ● 1 c. Heavy whipping cream
  • ● 2 tbsp Butter unsalted
  • ● ⅓ c Swerve Confectioners sugar substitute
  • ● 2 tsp Vanilla extract
  • ● Red food coloring
  • ● Blue food coloring

Instructions

  1. Heat the heavy whipping cream and 2 tbsp of butter in a saucepan over medium-high heat on the stove.
  2. Whisk in ⅓ cup of Swerve confectioners sugar substitute until well combined.
  3. Add in 2 tsp of vanilla extract.
  4. Cook the mixture down stirring constantly until it has thickened.
  5. Once thickened, remove from the heat and pour most of the mixture into a parchment lined loaf pan.
  6. Reserve a few tablespoons of the fudge mixture, and divide it into two small bowls.
  7. Add a few drops of red food coloring to one bowl, and a few drops of blue to another. Stir until the color is mixed well.
  8. Starting with the blue colored mixture, use a spoon to drizzle it over the top of the fudge mixture in the loaf pan.
  9. Drizzle the red mixture over top of the blue in the loaf pan.
  10. Use the tip of a knife to swirl the colors together lightly.
  11. Place the fudge in the freezer for a minimum of 3 hours or until hardened.
  12. Slice into 8 pieces and serve.
