Keto S’mores with Rich Chocolate and Fluffy Marshmallows
Keto S'mores are the ultimate Keto sweet treat. Sugar-Free chocolate topped with a fluffy sugar-free marshmallow and sandwiched between homemade sugar-free, gluten-free, low carb graham crackers.
As a kid, I went camping numerous times with my parents and had smores around the campfire.
I've also made them with my own kids.
These Keto S'mores are reminiscent of those s'mores around the campfire.
But these are great for anyone who's keto, low carb, sugar-free or gluten-free!

Make up some sweet homemade graham crackers and turn them into the keto dessert, keto treat, keto snack you're looking for.
These are easy enough to make inside year round or prepare your graham crackers ahead and take them camping for nostalgic s'mores reminiscent of your childhood.
What makes these Keto S’mores so easy?
If you pre-make your graham crackers, these take about 10 minutes to make. For me, that qualifies as an easy and fast keto recipe.
Where do you buy sugar-free marshmallows and chocolate?
I get my Lily's chocolate and the La Nouba marshmallows I used it in this recipe from Amazon.
I buy larger packages because they are things I will use and that cuts down in the overall price.
Both can be eaten aside from the s'mores so a great purchase.
What kind of grain-free flour do these Keto S’mores use?
The keto graham crackers for the s'mores uses almond flour. This is the option I use.
All almond flour is not created equal so either do your homework or use a recommended brand.
How do you make Keto S’mores?
In a mixing bowl, combine the almond flour, egg, butter, xanthan gum, baking powder, cinnamon, and Swerve sweetener. Mix together on high until completely combined.
Form the dough into a ball, and place in a Ziploc bag in the fridge for a minimum of 3 hours. It is best to let the dough sit in the fridge overnight.
When ready to make the graham crackers, preheat the oven to 350 degrees.
Roll the dough out between two pieces of parchment paper.
You can make the graham cracker dough as thick or as thin as you would like your crackers to be, but try to make them all the same thickness so that they will cook evenly.
Once rolled out, cut the dough into square shapes.
Poke holes all over the surface of each cracker square with the tines of a fork.
Place the dough squares on a parchment lined baking sheet, and bake for 8-10 minutes until golden brown.
Let cool for several minutes.
The thicker you make your cracker dough, the more cookie like and less crispy they will be when finished.
For crispier graham crackers, use a very thinly rolled dough.
To assemble the s’more, place one graham cracker face down on a plate, and put three squares of Lily’s chocolate bar on top of it.
Use a kitchen torch to lightly toast a keto friendly marshmallow on a skewer, and slide it onto the top of the chocolate with another graham cracker on top.
You can toast the marshmallows over an open fire as well, just be careful not to burn them.
The taste of keto friendly marshmallows changes when they get burnt.
