But I am here to help you with my favorite light and refreshing keto salads perfect for summer.
So many low carbers, especially those new to low carb, think it’s all meat all. the. time. That just isn’t the case and you should be doing your research to be successful on your healthy lifestyle journey.
That being said, keto and low carb are by far the easiest plans to follow and allow for treats as well.
With the Fourth of July coming up, what better time to experiment with new salads! You can serve a variety for friends and family.
The best way to follow your plan is to serve the foods that are acceptable on your plan. As they are normal foods, your friends and family will not know they are eating healthy.
These salads are not only tasty but they are low carb, high protein, with the right healthy fats. Perfect for the low carb/Ketogenic lifestyle!

CAPRESE CHICKEN SALAD
One of those dishes that people will always be asking for the recipe! This Caprese Chicken Salad recipe is super easy to throw together for a quick lunch but looks like it took hours to prepare! It is loaded with the fresh flavors of tomatoes, buffalo mozzarella, and sweet basil. It is my go-to recipe for a potluck brunch or throwing a bridal or baby shower!

GRILLED CHIMICHURRI CHICKEN AVOCADO SALAD
With minimal ingredients in the salad itself, the chimichurri is the star of this recipe. Sliced tomatoes and red onion make for a typical Uruguayan or Argentine salad, and with the addition of avocados, this salad will be your main meal and keep you full until you need it to! WHY has it taken me so long to post something from my own culture? I don’t know. But it’s about time I did, and what better way to start than with this salad!
GRILLED CAPRESE CHICKEN SALAD
Caprese Chicken Salad with the most incredible balsamic marinated chicken, fresh tomatoes, melt in your mouth mozzarella, grilled asparagus, creamy avocado, and crispy bacon all drizzled with creamy balsamic reduction dressing= out of this world! This caprese chicken salad will have you craving salad, dreaming about salad and not being able to stop eating salad! It is one of my favorite salads of all time and soon to be yours!
AVOCADO GREEK SALAD
A twist on the traditional Greek Salad! Normally, an authentic Greek salad does not contain avocado or lettuce, but consists of green peppers (or capsicum), tomatoes, cucumbers, feta, olives, and onion. In this house, however, we always add avocado. Avocado – on – everything – addiction. And why not?! It’s such a great addition, you’ll be doing it too!
MUFFALETTA SALAD
A green tossed salad with all the flavors of a Muffaletta Sandwich. This Muffaletta Salad is filling enough to be eaten alone as a meal and it is a must make recipe for a Mardi Gras party.
I like to chop everything up small so it’s like a chopped salad and you get lots of different flavors in every bite. I think that’s what makes a Muffaletta Sandwich so great- there are so many different flavors in every bite and they all compliment each other.
GRILLED ROMAINE SALAD WITH BACON AND BLUE CHEESE
You have not lived until you’ve tried a grilled Romaine salad, people…mark my words!! The slightly charred, smoky leaves of Romaine, the creamy blue cheese paired with the crispy, salty bacon, and the tangy, herb-y, flavor packed balsamic dressing. Oh man…it is seriously AMAZING! Speaking of the dressing…this dressing basically takes a plain balsamic vinaigrette and slaps it in the face. You start with a base of balsamic vinaigrette and then add three different kinds of dried herbs and a touch of Dijon mustard.
Goodbye old balsamic dressing. Hello best dressing ever.
BRUSSEL SPROUTS CAESAR SALAD
Brussels Sprouts Caesar Salad: Shredded, fresh Brussels sprouts are tossed with a simple homemade dressing and shaved Parmesan cheese. I bet you will never say you don’t like Brussels sprouts again!
CREAMY DILLED CUCUMBER SALAD
This salad could not be easier, it's pretty much just slice up some cucumber and onions and toss them in a creamy mixture of yogurt (or sour cream or mayo), lemon juice and garlic and you're good to go! In addition to being super easy to make you really can't go wrong with a cool and juicy cucumber salad on hot summer days! The cucumbers are just bursting with juices and this creamy dilled cucumber salad is sure to keep you nice and cool and hydrated this summer, especially when served chilled from the fridge!
ITALIAN SUB SALAD
This italian sub salad has all your favorite sub-flavors just without the bread for a low-carb paleo salad!
I’m not even sure this can be called a recipe, more of a method really or just inspiration. I knew that I had to share it though because if you’re like me you’ve missed Italian sub sandwiches since going gluten free. Well not anymore!

It’s lobster season both here in Belize and in the United States, meaning lobster lovers everywhere are rejoicing!For those of you who just don’t get what all the fuss is about, you can substitute shrimp or even chicken in this BLT Lobster Roll Salad recipe and it will be different but still delicious!
COASTAL COBB SALAD WITH CREAMY CILANTRO LEMON DRESSING
I like cobb salads for two main reasons. First, they are loaded with tons of different flavors and textures. Boring salads are the worst. And second, bacon. Because bacon is awesome. I’ve taken the traditional cobb salad and put my own spin on it by adding shrimp, avocado, and a creamy cilantro lemon dressing. Oh yeahhh.This coastal cobb salad is perfect for a weeknight meal because it comes together really quickly if you cook the proteins (chicken, eggs, bacon, and shrimp) ahead of time. And even if you don’t cook them ahead of time, this recipe is still really simple.
