Keto Cucumber Caprese Bites

Ingredients:
8 Thick slices of cucumber
4 oz. Fresh mozzarella cheese
4 Cherry tomatoes cut in half lengthwise
2 tbsp Fresh chopped basil
1 tbsp Balsamic vinegar
Salt and pepper to taste
Instructions:
1. Begin layering your cucumber caprese bites by placing a slice of cucumber on a plate.
2. Top the cucumber with a ½ oz. slice of mozzarella cheese.
3. Add half of a cherry tomato to the top of the cheese.
4. Sprinkle some salt and pepper over the tomato.
5. Drizzle some balsamic vinegar over the cucumber caprese bite.
6. Repeat steps 1-5 until you have finished making all 8 servings. Serve immediately, and refrigerate leftovers in an airtight container.
