I love making this for special occasions. In fact, I made it on Christmas Day for my non-keto family and they were non the wiser, yet I remained on plan! They raved over how delicious it was and went back for second and thirds, devouring all I had made.
Bacon Freak Keto Feta and Bacon Breakfast Bake
This Bacon Freak Keto Feta & Bacon Breakfast Bake is an easy, baked strata recipe that uses eggs as its main ingredient along with Bacon Freak Firecracker Chili Bacon. Strata recipes always use eggs as its base and incorporate other ingredients to enhance on the flavor. This time it includes feta cheese, spinach, peppers, onions, and bacon. What makes this recipe extra easy is that it can be prepped ahead of time and popped in the oven in the morning. While preparing it ahead of time is easier, you can also cut corners using pre-cut peppers and onions. This also makes it the perfect casserole to meal prep for a brunch as well as a lunch with a side salad.
What inspired this Breakfast Bake?
I recently had gotten some new bacon that I wanted to try called Bacon Freak. While I certainly could have used some plain bacon, I made a point to use this flavor-enhanced bacon for my keto-friendly breakfast bake. I had gotten Apple Pie Bacon as well as the Firecracker Chili Bacon. My instinct was that the firecracker Chili Bacon would give it that extra kick of flavor and i was right. It was delicious!
For me, the combination of the kicked up bacon with my other strata ingredients made for such a flavorful breakfast casserole.
A breakfast casserole recipe?
Typically people only make these for special occasions because of the baking time. However, I make these on the weekend alotting for enough for leftovers as it reheats amazingly!
Because it is so simple in preparation, during the baking time allows me time with family.
So, after cooking the bacon until crisp (not overcooked) and crumbled, I added to my egg mixture with the vegetables and poured into my baking pan to bake the strata for about 40 minutes in a pre-heated oven at 350 degrees. Next, I broiled it, while I watched it, for an additional minute in order to add get the top a little more golden in color.

In this brunch dish, I’m using Bacon Freak Bacon, which is a line of bacon that enhances the flavor of any dish or meal and will easily become a staple in your home. What are good toppings?
The breakfast bake needs no additional toppings. However, I like to change it up when I eat it for leftovers for brunch or lunch. Some of the toppings I like are:
- Additional Cheese
- Sour cream
- Pico De Gallo
- Guacamole

Keto Feta and Bacon Breakfast Bake
An easy egg bake recipe made with feta, bacon, spinach, and peppers. Less than 10 minutes to prep and perfect for everyday or special occasions!
Ingredients
- 8 large eggs
- 1/2 c. chopped red, yellow, and orange bell peppers
- 1/4 c. chopped onion
- 3 oz. crumbled feta cheese
- 10 slices of cooked bacon crumbled
- 1/2 tsp. garlic powder
- 2 c. fresh spinach
Instructions
- Preheat the oven to 350 degrees.
- In a mixing bowl, combine all of the ingredients except the fresh spinach. Stir to combine completely.
- Place 2 cups of fresh spinach leaves in the bottom of a greased loaf pan.
- Pour the egg mixture over top of the spinach leaves in the loaf pan, and spread into an even layer.
- Bake the mixture in the loaf pan uncovered for 35-40 minutes until the egg is completely cooked through.
- Garnish with freshly chopped parsley or green onions if desired.
