Easiest & Best White Chicken Chili
Chili was always a favorite in our home and this version is no exception! It is the ultimate hearty meal that can feed a crowd. Chili is the perfect meal to come inside to after being out in the cold and the perfect addition to a game day feast.
This white chili recipe is a regular in our home . It gets it’s full flavor from the addition of green chilis, as well as the cumin and cayenne.
It’s 35 minute cook time makes it a family-friendly recipe. It is so easy and doesn’t require laborious time spent over the stove. This hearty chili is not only comforting but a healthy addition for regular rotation.
While my family loves this dish, it’s my secret just how easy it is. They think I have slaved all day in the kitchen.
It also makes quite a bit and if you have leftovers, which we rarely do, it is even more delicious after the flavors have been allowed to meld overnight. I have, on occasion, made a double batch to ensure I do have enough throughout the week. I have even frozen batches for unexpected events, like company, and no time to cook.
What You Need For White Chicken Chili
- Chicken Breast
- Olive Oil
- Onion
- Chicken Broth
- Garlic
- Oregano
- Cannellini beans
- Black Pepper
- Cayenne
- Cumin
- Chili Powder
- Cream Cheese
- Half & Half
- Cilantro
- Green Chilis
- Corn
- and a slow cooker
How Do You Make White Chicken Chili
Place chicken breasts in slow cooker and season with the salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
Add chicken broth, corn, garlic, beans, chiles, and cilantro and stir.
Cover. Cook on LOW for 8 hours or on HIGH for 4 hours.
Remove chicken from crock pot and shred. Return to slow cooker.
To the slow cooker mixture, add cream cheese and half and half. Stir to mix in. Cover and cook additional 15 minutes, or until creamy. Stir.
Serve. Add desired toppings.
Tips For White Chicken Chili
One of my favorite tips for this is to use leftover, or even rotisserie chicken to make it easier and faster.
Be careful when purchasing green chilis. They do come in different heat levels so be sure to grab the right one for your family.
Toppings take your bowl to the next level. Jalapenos, sour cream, avocado, shredded cheese, cilantro and tortilla strips are what we like to use.
How Long Will White Chicken Chili Keep?
If stored in an airtight container, the white bean chicken chili will keep well in the refrigerator for 5 to 7 days and freezer as long as 6 months.

Ingredients
- 1 lb boneless skinless chicken breasts
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 24 oz. chicken broth
- (2) 15oz cans great Northern beans, drained and rinsed
- (2) 4oz cans diced green chiles
- (1 ) 15oz can whole kernel corn, drained
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 3/4 tsp oregano
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper
- small handful fresh cilantro, chopped
- 4 oz. cream cheese., softened
- 1/4 c. half and half
Instructions
