To help out, I am sharing my favorite chicken recipes that are delicious and budget-friendly.
There is no reason to spend a lot of money on keto/low carb. The best part of chicken is that it is inexpensive and multifaceted, easily taking on different flavors with the implementation of a variety of seasonings and marinades and so easy to cook.
Tip: I buy large packs of meat at my Sams Club and portion into bags for my family size. This not only saves money but if you add marinade to the bag, it’ll marinade as it thaws. This method saves time and money. It also prevents boredom by avoiding eating the same thing all the time.

These Greek-inspired Lemon Chicken Kebabs made on the stove top and are low carb, keto, Paleo and Whole 30. This recipe uses basic ingredients most cooks always have on hand. Skewer marinated chicken with whatever veggies you like.

Chicken meatballs are delicious and simple, but lend themselves to a variety of flavors. These chicken meatballs stuffed with provolone cheese are always a hit with the family. Maybe it’s the gooey, melted cheese center? Or perhaps the tender, slow-cooked chicken? Whatever the reason, my entire household goes crazy for these cheesy chicken meatballs. I love this recipe because it’s one of those things you can prep ahead of time, then set and forget while the crockpot works its magic.
ZUCCHINI PASTA WITH CHICKEN & PISTACHIOS
Made with zucchini noodles (one of our favorite most versatile vegetables!) instead of actual pasta, this dish won’t leave you feeling bloated and carb-crashing after 15 minutes. Winner of a meal in our opinion!

The beauty in this recipe is how complex it seems from its flavor profiles, but how simple it actually is to make at home. No special wok or obscure ingredients are required! You have to try this easy cashew chicken today!
WHITE CHICKEN CHILI
Sometimes it’s hard for people to understand how you can enjoy chili without beans…but it’s easier than you might think! Throwing in some extra chicken and veggies adds even more flavor. This chili is made with shredded chicken, peppers and spicy pepper jack cheese. It’s not as thick as traditional chili, but it’s loaded with flavor…and I promise you it’s filling!

ONE PAN PESTO CHICKEN AND VEGGIES
One-Pan Pesto Chicken and Veggies – boneless, skinless chicken thighs cooked with sun-dried tomatoes, asparagus, cherry tomatoes in a delicious basil pesto sauce. Everything is done in one pan, 30 minutes recipe from start to finish!
LOW CARB CHICKEN ENCHILADA CASSEROLE
This recipe is pretty quick and easy to cook, though it does require a bit of prep time for the chicken. For the low carb chicken enchilada casserole, I removed the tortillas and added some extra cheese. You can add additional ingredients depending on what you like in your enchiladas, like avocado, green onions, lettuce, tomato, whatever your little heart desires. You can add black olives, use monterey jack cheese or even add black beans if you don’t mind some extra carbs.
