To help out, I am sharing my favorite chicken recipes that are delicious and budget-friendly.
There is no reason to spend a lot of money on keto/low carb. The best part of chicken is that it is inexpensive and multifaceted, easily taking on different flavors with the implementation of a variety of seasonings and marinades and so easy to cook.
Tip: I buy large packs of meat at my Sams Club and portion into bags for my family size. This not only saves money but if you add marinade to the bag, it’ll marinade as it thaws. This method saves time and money. It also prevents boredom by avoiding eating the same thing all the time.

I love this recipe because it’s one of those things you can prep ahead of time, then set and forget while the crockpot works its magic.
ZUCCHINI PASTA WITH CHICKEN & PISTACHIOS
Made with zucchini noodles (one of our favorite most versatile vegetables!) instead of actual pasta, this dish won’t leave you feeling bloated and carb-crashing after 15 minutes. Winner of a meal in our opinion!

Sometimes it’s hard for people to understand how you can enjoy chili without beans…but it’s easier than you might think! Throwing in some extra chicken and veggies adds even more flavor. ONE PAN PESTO CHICKEN AND VEGGIES
One-Pan Pesto Chicken and Veggies – boneless, skinless chicken thighs cooked with sun-dried tomatoes, asparagus, cherry tomatoes in a delicious basil pesto sauce. Everything is done in one pan, 30 minutes recipe from start to finish!
LOW CARB CHICKEN ENCHILADA CASSEROLE
This recipe is pretty quick and easy to cook, though it does require a bit of prep time for the chicken. For the low carb chicken enchilada casserole, I removed the tortillas and added some extra cheese. You can add additional ingredients depending on what you like in your enchiladas, like avocado, green onions, lettuce, tomato, whatever your little heart desires. You can add black olives, use monterey jack cheese or even add black beans if you don’t mind some extra carbs.
