I’ve compiled the list of the best, as well as my favorite, low carb breakfast ideas that will make mornings a breeze.
I don’t know about anyone else but breakfast is difficult for me whether I am on a diet, a lifestyle change, or whatever. While many of us are busy trying to get off to work and school, there are some of us that are just not morning people and do not want to cook but want a healthy breakfast for ourselves and our family.
That’s how most of us end up eating crap. A donut is easier to grab than to prepare breakfast, am I right?
However, if you plan ahead and meal prep, you can prepare breakfast for the week on your day off. Many of these are such easy ideas that it’s basically dump in a pan and bake.
I have been doing this breakfast meal prep for awhile now and it really has simplified mornings around here! Check out my list and,on your day off, prepare for your week with these grab n go meals!
1. Keto Bacon, Cheese, and Avocado Egg Bites
These Keto Bacon, Cheese, and Avocado Egg Bites are so versatile that you can have them for breakfast, a snack, or easy party appetizer. Pre-make the hard-boiled eggs so they are even easier to prepare.
Easy Low Carb Breakfast Keto Bacon, Cheese, and Avocado Egg Bites
Prep Time: 10 minutes
Cook Time: 10 minutes
Servings: 6
Net Carbs: 0-1 net carb per serving
Ingredients:
6 Pre-cooked hard boiled eggs peeled
6 Thin slices of cheddar cheese
3 Slices of cooked bacon
½ Avocado
½ tsp Lemon juice
Salt and pepper to taste
Toothpicks
Instructions:
1. Place ½ of an avocado into a food processor.
2. Add in ½ tsp of lemon as well as salt and pepper to taste. Blend until smooth.
3. Slice each hard boiled egg in half lengthwise.
4. Place one slice of thin cut cheddar cheese on the bottom half of the egg.
5. Top with ½ a slice of cooked bacon.
6. Place a dollop of the avocado mixture on top of the bacon.
7. Put the other half of the egg face down on top to create a little sandwich. Secure the egg bite with a toothpick inserted down the center.
8. Repeat steps 4-7 with the remaining eggs.
9. Top each egg bite with salt and pepper to taste, and serve.
